How does personality affect an Aniimo's stats?

The practical upshot is that the species tells you what an Aniimo is, and the personality tells you which version of it you caught. Two of the same species can come out with different stat distributions, different potential ratings and different traits, and that stays true even between two that are otherwise perfect. Catching a second copy of something you already own is not wasted effort.

Each letter's contribution is small on its own. Taken together they pull an individual toward a shape, which is why the same creature can feel like a slightly different unit in two different players' teams.

What else feeds the same six attributes

Personality is one input, not the whole picture. Each of an Aniimo's six attributes is set by both innate potential and acquired potential, so where a creature starts and what you put into it both count.

Every Aniimo shares the same maximum potential cap of 20, and fully invested Aniimo reach identical stats regardless of the rarity they started at. Evolution is the other lever: most Aniimo gain higher stats and new abilities when they evolve, though not every species has three evolutionary stages.

If you want to move stats across individuals, stat inheritance is family-locked. Resident Star Up and Awaken Potentials only work between Aniimo of the same family, so a good roll cannot be shunted into an unrelated creature.

What personality does not touch

Different forms of the same Aniimo share identical base stats. Changing form is a cosmetic and situational choice at the stat level, not a way to reroll the numbers. The variation you are looking at comes from the individual, not the form it is wearing.

Not settled: The stat convergence at full investment is stated about starting rarity. How much of a personality's distribution still shows once an Aniimo is fully invested to the cap of 20 is not settled.
