Break Role Aniimo and Poise Breakers
Break-role Aniimo exist to strip guard and poise off an enemy so the rest of your team can hit something that cannot fight back. Here is who does it, which skills do the most of it, and who profits once the bar is empty.

Most of the damage you will ever do in Aniimo happens in a window you have to make yourself. Enemies guard. They have poise, and defence gauges, and break bars, and until those are gone your big hits land on something that is still standing upright and swinging back.
Break-role Aniimo are the ones who make that window. They disrupt enemies and break their guard or poise, and everything else in your team is built to walk through the gap afterwards. That is why the standard early team is a DPS unit, a break unit, and a healer or support. The break unit is not the damage. It is the reason the damage counts.

Who is actually a Break unit

Magmarex is classified as a Break role Aniimo. So is Budclaw, and Budclaw is considered a capable one rather than a box-ticking pick: its trait rewards a tunnelling playstyle by increasing its BREAK efficiency, so the more you commit to staying on one target, the more of the bar you take off. Geoclaw is the Ice-element BREAK Aniimo, and it applies [Ice Debuff] stacks to targets very consistently. The debuff side of Geoclaw belongs to the ice guide; for break purposes, it is a Break unit that never stops stacking.
Inferlupa is the specialist. Its whole thing is depleting enemy break bars, and its Unbroken Flameruff Spirit skill enhances BREAK efficiency through repeated ricochets, so the skill gets better the more surfaces and bodies it has to bounce between.
The important exception is your starter. Helion is played as an aggressive melee attacker that also breaks enemy defence gauges, but its official in-game role classification is DPS, not BREAK. It will get bars down. It does not fill the break slot on paper, and if you are building a team around role classifications, that distinction matters.

Break units that break while tanking

Not every break unit wants to be in the enemy's face with no protection. Tubster's defensive play style is what contributes to its ability to break enemies, which is a neater fit than it sounds: staying alive in melee is most of the job, and Tubster is built to do exactly that.
Rookey is the fullest version of the same idea. It combines defensive stat scaling, damage reduction, counter mechanics and strong BREAK potential in one unit, so it soaks the hits, answers them, and takes the bar down while doing it. If your break unit keeps dying before the bar empties, this is the shape of Aniimo you want instead.
The skills that take bars off
Helion's Holy Storm is a spinning storm attack that pulls surrounding enemies toward its centre, and it carries a 150% break multiplier. Those two properties work together. The pull gathers the pack, and the multiplier means everything it gathered is losing gauge at once. It is the clearest example in the game of why break and crowd control sit in the same conversation.
Inferlupa's Unbroken Flameruff Spirit is the other one to learn. Ricochets are how it scales, so you want it thrown where it has somewhere to bounce, not into an isolated target in open ground.
The Pawney line brings Shadow Cut, used to deplete an enemy's break health. The line has its own guide covering how it grapples and where it fits in PvP; for team building, know that Shadow Cut is a break tool and that the line is one of the better places to find one.

Spending the window once it opens
Breaking is only half of it. Some Aniimo are specifically paid for hitting something that is already broken, and those are the units you want holding the other slot.
Pawni is the model. Its trait grants up to 30% bonus damage against enemies that are broken or under crowd control, and the same idea carries up the line, where Pawney's Pursuit trait grants 30% extra damage against targets affected by control effects or in the BREAK state. Pawni's ultimate also deals increased damage to broken enemies, which means the order of your rotation matters more than the size of the button. Fire the ultimate into a standing enemy and you are throwing away the bonus.
Turbo works from the other end. It provides buffs that enhance team damage and break efficiency, so it makes the break arrive sooner and the payoff land harder. A support that touches both halves of this loop is worth more than its own damage number suggests.

Where to start
Bring one break unit to every fight and build a second one in the other element you use most. Budclaw or Inferlupa if you want the bar gone fast, Rookey or Tubster if you want the bar gone while you survive, and something with a break-state damage trait standing next to them to spend the window when it opens.
