Where to find Irisalis: Sea of Flowers Vein Rift
Irisalis never turns up in the wild. Craft the Legendary Aniipod and it marks her on your map, opens a rift portal in the Sea of Flowers and takes you straight there.

If you have been searching the map for Irisalis, you can stop. She does not spawn in the open world, and no amount of wandering will make her appear.

Why Irisalis never spawns in the open world
Most Aniimo spawn as you explore, and you catch them where they stand. Irisalis is the exception. She does not appear as a random open-world spawn, and you cannot catch her like regular Aniimo.
She lives in a rift space of her own, outside the normal world, and the encounter with her is a one-time narrative boss fight. That explains both points. She has no spawn point because she is not part of the spawning world, and there is no normal catch because the meeting is written as a story beat.
The practical upshot: time spent hunting her in the open world is wasted. All of the progress comes from the item you craft.
How to get Irisalis: craft the Legendary Aniipod

Crafting the Legendary Aniipod does several things at once. It unlocks a dedicated story quest for Irisalis. It reveals the encounter on your world map, so you never have to guess where to go. It starts detecting her trails. It also unlocks the rift space where Irisalis lives and where you fight her.

The Sea of Flowers Vein Rift
Once you craft the Legendary Aniipod, a large rift portal appears in the Sea of Flowers. That portal is the way into her space, and the Irisalis investigation is entered through a Vein Rift.
You do not have to walk there. Tracking Irisalis with the crafted item teleports you to the rift vein in the Sea of Flowers where she appears. Craft, track, and you are standing at the encounter.
Inside, you get one shot at a narrative boss fight. It is a one-time encounter, so check your team before you track her, not after you arrive.
Where to start
Stop looking for Irisalis in the open world. Craft the Legendary Aniipod, follow the story quest it unlocks, and track her to teleport into the Vein Rift in the Sea of Flowers. You only get to fight her once, so go in with a team you trust.
